Ingredients
- 1 pound rotini pasta
- 3–4 drops of red and blue liquid food coloring
- 2 tablespoons water, separate
- 1 tablespoon olive or vegetable oil
- 1 pint cherry tomatoes, halved (approximately 10 ounces)
- 1 cup mozzarella cheese, cubed or use mozzarella pearls
- 3/4 cup pepperoni, quartered
- 1/2 cup chopped black olives
- 1 (16-ounce) bottle of italian dressing
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water.
- Mix red and blue food coloring separately with water and drizzle over portions of the pasta for coloring.
- In a mixing bowl, combine the colored pasta with olive oil, cherry tomatoes, mozzarella, pepperoni, and black olives.
- Add Italian dressing and mix until combined.
- Chill in the refrigerator for at least one hour before serving.
