  • 1/2 tsp red chili flakes (optional)
  • 1/2 cup breadcrumbs
  • 1 egg
  • Salt and pepper to taste
  • 1 tbsp vegetable oil (for frying)
  • 1 tbsp vegetable oil (for sauce)
  • 2 garlic cloves, minced (for sauce)
  • 1 tbsp Thai red curry paste
  • 1 tsp turmeric powder

Instructions

  1. In a mixing bowl, combine ground chicken, minced garlic, grated ginger, green onions, cilantro, fish sauce, soy sauce, red chili flakes (if using), breadcrumbs, egg, salt, and pepper. Mix until just combined.
  2. Shape the mixture into one-inch meatballs.
  3. Heat vegetable oil in a frying pan over medium heat and fry meatballs until golden brown on all sides (about 6-8 minutes).
  4. In another pan, heat oil and sauté minced garlic until fragrant. Stir in red curry paste and turmeric; cook for another minute.
  5. Add fried meatballs to the coconut curry sauce and simmer for about 5 minutes to meld flavors.
