  • 1 ¼ pounds chicken cutlets
  • 1 cup panko breadcrumbs
  • ¼ cup sesame seeds
  • 1 teaspoon salt
  • 1 large egg
  • Fry oil
  • 2 shallots (peeled and sliced thin)
  • 34 cloves garlic (minced)
  • 2 tablespoons fresh grated ginger
  • 15 ounces unsweetened coconut milk
  • 5 tablespoons white miso paste
  • 10 cups water
  • 3 packets instant chicken ramen noodles
  • 2 cups fresh spinach leaves
  • Fried onions
  • Scallions
  • Furikake
  • Nori sheets
  • Sriracha
  • Gochujang sauce

Instructions

  1. Prepare your tools: a large skillet, a large sauce pot, and shallow bowls for breading.
  2. Whisk an egg in one bowl. In another bowl, combine panko breadcrumbs, sesame seeds, and salt.
  3. Coat chicken cutlets in egg mixture then bread them thoroughly before frying in hot oil until golden brown.
  4. In the sauce pot, sauté sliced turkey bacon, shallots, garlic, and ginger until fragrant.
  5. Add coconut milk, miso paste, water, and seasoning packets to create the broth; boil then simmer.
  6. Cook ramen noodles in the broth for about 2-3 minutes and stir in fresh spinach leaves.
  7. Slice fried chicken katsu and serve over ramen with desired garnishes.
