- 1 ¼ pounds chicken cutlets
- 1 cup panko breadcrumbs

- 3–4 cloves garlic (minced)
- 2 tablespoons fresh grated ginger
- 15 ounces unsweetened coconut milk
- 5 tablespoons white miso paste
- 10 cups water
- 3 packets instant chicken ramen noodles
- 2 cups fresh spinach leaves
- Fried onions

Instructions
- Prepare your tools: a large skillet, a large sauce pot, and shallow bowls for breading.
- Whisk an egg in one bowl. In another bowl, combine panko breadcrumbs, sesame seeds, and salt.
- Coat chicken cutlets in egg mixture then bread them thoroughly before frying in hot oil until golden brown.
- In the sauce pot, sauté sliced turkey bacon, shallots, garlic, and ginger until fragrant.
- Add coconut milk, miso paste, water, and seasoning packets to create the broth; boil then simmer.
- Cook ramen noodles in the broth for about 2-3 minutes and stir in fresh spinach leaves.
- Slice fried chicken katsu and serve over ramen with desired garnishes.
