  • 3 bell peppers (seeded and thinly sliced)
  • 1 medium yellow onion (thinly sliced)
  • 1 ¼ lb boneless chicken breasts (sliced into thin strips)
  • 2 Tablespoons olive oil
  • 3 cloves garlic (minced)
  • Juice from one lime (about 2 Tablespoons)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground pepper
  • 8 flour or corn tortillas
  • Optional toppings: Salsa, guacamole, shredded lettuce, sour cream or Greek yogurt

Instructions

  1. Prepare your seasoning by mixing all the spices in a small bowl.
  2. Heat 1 tablespoon of olive oil in a cast iron skillet over medium heat. Sauté the bell peppers and onion for about 5-7 minutes until softened. Add garlic and half the seasoning mixture; cook for another 2-3 minutes.
  3. Remove veggies from the pan. In the same skillet, add remaining oil and chicken strips seasoned with lime juice and remaining spices. Cook until fully cooked through (about 5-6 minutes).
  4. Return vegetables to the skillet and mix well; heat through for an additional minute.
  5. Serve immediately in warm tortillas with toppings like salsa, guacamole, or shredded lettuce.
