- 3 bell peppers (seeded and thinly sliced)
- 1 medium yellow onion (thinly sliced)
- 1 ¼ lb boneless chicken breasts (sliced into thin strips)
- 2 Tablespoons olive oil
- 3 cloves garlic (minced)
- Juice from one lime (about 2 Tablespoons)
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 1 teaspoon fine sea salt
- ½ teaspoon ground pepper
- 8 flour or corn tortillas
- Optional toppings: Salsa, guacamole, shredded lettuce, sour cream or Greek yogurt
Instructions
- Prepare your seasoning by mixing all the spices in a small bowl.
- Heat 1 tablespoon of olive oil in a cast iron skillet over medium heat. Sauté the bell peppers and onion for about 5-7 minutes until softened. Add garlic and half the seasoning mixture; cook for another 2-3 minutes.
- Remove veggies from the pan. In the same skillet, add remaining oil and chicken strips seasoned with lime juice and remaining spices. Cook until fully cooked through (about 5-6 minutes).
- Return vegetables to the skillet and mix well; heat through for an additional minute.
- Serve immediately in warm tortillas with toppings like salsa, guacamole, or shredded lettuce.
