  • Red bell peppers
  • Yellow bell peppers
  • Onion slices

  • Curry powder
  • Coconut milk

  • Long-grain basmati rice
  • Water
  • Pinch of salt

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced onions, garlic, and ginger paste; sauté for 2-3 minutes until fragrant.
  2. Add chicken breast chunks and sear until lightly browned on all sides.
  3. Stir in curry powder to coat the chicken. Add sliced bell peppers and pour in coconut milk.
  4. Reduce heat to low and simmer until the chicken is tender, about 15-20 minutes.
  5. While the curry simmers, rinse basmati rice under cold water. In a pot, combine rice with water and a pinch of salt; bring to a boil, then reduce heat and cover until tender (about 15 minutes).
  6. Serve the curry over fluffy rice and garnish with fresh cilantro.
