  • 1 small yellow onion
  • 2 celery stalks
  • 2 garlic cloves
  • 4 strips turkey bacon, chopped
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 2 cups diced Yukon Gold potatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • Salt and pepper to taste
  • 1 1/2 cups cooked shredded chicken
  • 1 1/2 cups corn (fresh, frozen, or canned)
  • 1 cup half & half
  • 1/3 cup sour cream

Instructions

  1. In a large pot over medium heat, cook chopped turkey bacon until crispy. Remove and set aside.
  2. Sauté diced onion, chopped celery, and minced garlic in the rendered fat until softened.
  3. Gradually stir in flour until smooth to create a roux.
  4. Slowly add chicken broth while stirring; then incorporate diced potatoes, thyme, parsley, salt, and pepper. Simmer until potatoes are tender.
  5. Stir in shredded chicken and corn; cook for an additional 5–7 minutes until heated through.
  6. Reduce heat and mix in half & half and sour cream gently without boiling.
  7. Serve hot with crispy turkey bacon on top.
