  • 3 pounds bone-in chicken pieces
  • 1 pound cremini mushrooms
  • 4 tablespoons butter
  • 4 tablespoons olive oil
  • ¼ cup shallots, diced
  • 1½ tablespoons garlic, minced
  • ½ cup apple juice
  • ½ cup white apple vinegar
  • 3 tablespoons tomato paste
  • 2 Roma tomatoes, diced
  • 1½ cups chicken stock
  • ½ cup beef stock
  • ¼ cup sour cream
  • Fresh tarragon and parsley for garnish

Instructions

  1. Season chicken pieces with kosher salt and black pepper.
  2. In a large skillet, heat butter and olive oil over medium heat. Cook chicken for about 8 minutes on each side until golden brown. Remove and keep warm.
  3. In the same skillet, sauté mushrooms for about 3 minutes. Add shallots and garlic; cook until fragrant.
  4. Pour in apple juice and vinegar; let it reduce slightly before adding tomatoes, stocks, tomato paste, and sour cream. Simmer until thickened.
  5. Stir in fresh tarragon, return chicken to the pan to absorb flavors, and garnish with parsley before serving.
