  • 6 to 7 cups sliced apples (peeled and cored)
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tablespoons cornstarch
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter

Instructions

  1. Whisk together flour, sugar, and salt in a large bowl.
  2. Add cold butter and work it into the flour using a pastry cutter until you have coarse crumbs.
  3. In a small bowl, whisk eggs, ice water, and lemon juice. Pour over the flour mixture and stir until dough just comes together.
  4. Divide dough into two pieces (one larger than the other). Flatten into rectangles, wrap in plastic wrap, and refrigerate for 30 minutes.
  5. Toss apple slices with granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, salt, lemon juice, and vanilla until well coated.
  6. Preheat your oven to 375°F.
  7. Spray a 9×13-inch pan with cooking spray.
  8. Roll out the larger piece of dough to fit your pan with some overhang. Press it down into the pan.
  9. Spread the apple filling evenly over the bottom crust.
  10. Roll out the remaining piece of dough and place it over the filling.
  11. Trim edges as needed and crimp with a fork to seal.
  12. Cut vents in the top crust to allow steam to escape.
  13. Bake for 45 to 50 minutes until golden brown and bubbling around the edges.
  14. Allow cooling completely on a wire rack.
  15. Whisk together powdered sugar, milk, vanilla extract, and melted butter until smooth.
  16. Spread glaze over cooled apple slices.
  17. Let set for about 15 minutes before cutting into squares.
