- 2 cups cauliflower florets

- 1 cup zucchini, sliced and patted dry
- 1 cup shredded sharp cheddar cheese
- 1/2 cup mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cups milk
- 1/2 teaspoon garlic powder
- 1/4 teaspoon mustard powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs mixed with 1 tablespoon melted butter
Instructions
- Preheat the oven to 375°F (190°C). Lightly steam or blanch the broccoli, cauliflower, and carrots until just tender. Pat them dry.
- In a saucepan over medium heat, melt the butter. Whisk in the flour to create a roux. Gradually whisk in the milk until smooth and thickened. Stir in the cheddar, mozzarella, garlic powder, mustard powder, salt, and pepper until melted.
- In a greased baking dish, layer the vegetables evenly and pour the cheese sauce over them. Gently fold to combine.
- Sprinkle with grated Parmesan cheese and buttered breadcrumbs on top.
- Bake uncovered for 25–30 minutes until bubbly and golden brown. Allow to rest for 10 minutes before serving.
