  • 2 cups cauliflower florets
  • 1 cup sliced carrots
  • 1 cup zucchini, sliced and patted dry
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups milk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon mustard powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs mixed with 1 tablespoon melted butter

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly steam or blanch the broccoli, cauliflower, and carrots until just tender. Pat them dry.
  2. In a saucepan over medium heat, melt the butter. Whisk in the flour to create a roux. Gradually whisk in the milk until smooth and thickened. Stir in the cheddar, mozzarella, garlic powder, mustard powder, salt, and pepper until melted.
  3. In a greased baking dish, layer the vegetables evenly and pour the cheese sauce over them. Gently fold to combine.
  4. Sprinkle with grated Parmesan cheese and buttered breadcrumbs on top.
  5. Bake uncovered for 25–30 minutes until bubbly and golden brown. Allow to rest for 10 minutes before serving.
