Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente, about 8-10 minutes. Reserve some pasta water before draining.
  2. Season chicken strips with Cajun seasoning, garlic powder, salt, and pepper. In a skillet, heat olive oil and butter over medium-high heat and cook the chicken until golden brown.
  3. In the same skillet, lower the heat and sauté minced garlic in butter. Stir in heavy cream and milk; bring to a simmer.
  4. Add Velveeta cheese to melt into the sauce, then stir in mozzarella and Parmesan until creamy.
  5. Combine cooked rotini with the sauce, tossing to coat evenly.
