- 2 pounds fresh spinach
- 1 medium onion
- 3 cloves garlic
- 2 tablespoons olive oil
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 large eggs
- ¼ cup breadcrumbs
- ½ teaspoon Italian seasoning
- Salt and pepper, to taste
- ¼ teaspoon red pepper flakes, optional
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a skillet, heat olive oil over medium heat. Sauté chopped onion until soft; add minced garlic and cook briefly.
- Gradually add spinach until wilted. Drain excess liquid and let cool.
- In a mixing bowl, combine ricotta, mozzarella, Parmesan, eggs, Italian seasoning, salt, pepper, and optional red pepper flakes.
