  • 1 lbs boneless, skinless chicken breasts
  • 12 oz rigatoni pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Boil the rigatoni in salted water until al dente. Drain and set aside.
  2. Season chicken strips with Cajun seasoning, garlic powder, salt, and pepper. Cook in a skillet with olive oil and butter until golden brown.
  3. In the same skillet, melt butter over medium heat and sauté minced garlic until fragrant.
  4. Add heavy cream and milk to the skillet; stir in Velveeta until melted. Follow with mozzarella and Parmesan cheese until thickened.
  5. Toss cooked rigatoni into the sauce until well coated.
  6. Serve on plates with chicken strips alongside, garnished with fresh parsley if desired.
