- 20 oz refrigerated three cheese tortellini
- 2 tbsp extra virgin olive oil
- 1 medium yellow onion (chopped)
- 2 ears corn (kernels cut from cobs)
- 2 cups grape tomatoes
- 2 medium zucchini (sliced)
- 3 garlic cloves (minced)
- 1 1/4 cups marinara sauce
- Salt and black pepper to taste
- Parmesan cheese (for garnish)
- Fresh basil and parsley (for garnish)
Instructions
- Boil a large pot of salted water and cook tortellini according to package instructions until one minute shy of done.
- In a sauté pan, heat olive oil over medium-high heat, add onion, and sauté for about 3 minutes.
- Add corn and cook for an additional 2 minutes.
- Stir in grape tomatoes and sauté until softened (about 3 minutes).
- Add zucchini and garlic; continue cooking until veggies are tender (about 6–8 minutes).
- Drain tortellini, reserving some pasta water, then combine with the sautéed veggies and marinara sauce in the pan.
- Toss over low heat until heated through; adjust consistency with reserved pasta water if needed.
- Season with salt and pepper, mix in half the parmesan cheese, basil, and parsley before serving.
