  • 20 oz refrigerated three cheese tortellini
  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion (chopped)
  • 2 ears corn (kernels cut from cobs)
  • 2 cups grape tomatoes
  • 2 medium zucchini (sliced)
  • 3 garlic cloves (minced)
  • 1 1/4 cups marinara sauce
  • Salt and black pepper to taste
  • Parmesan cheese (for garnish)
  • Fresh basil and parsley (for garnish)

Instructions

  1. Boil a large pot of salted water and cook tortellini according to package instructions until one minute shy of done.
  2. In a sauté pan, heat olive oil over medium-high heat, add onion, and sauté for about 3 minutes.
  3. Add corn and cook for an additional 2 minutes.
  4. Stir in grape tomatoes and sauté until softened (about 3 minutes).
  5. Add zucchini and garlic; continue cooking until veggies are tender (about 6–8 minutes).
  6. Drain tortellini, reserving some pasta water, then combine with the sautéed veggies and marinara sauce in the pan.
  7. Toss over low heat until heated through; adjust consistency with reserved pasta water if needed.
  8. Season with salt and pepper, mix in half the parmesan cheese, basil, and parsley before serving.
