  • 1 (20 ounce) package refrigerated cheese tortellini
  • 8 ounces cremini mushrooms (sliced)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 tablespoon fresh sage (chopped)
  • 1 clove garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • Salt and pepper (to taste)

Instructions

  1. Boil water in a pot according to package instructions for the tortellini. Once boiling, add the tortellini and cook until tender.
  2. While the tortellini cooks, slice the mushrooms and chop the sage.
  3. Heat 1 tablespoon of butter and olive oil in a skillet over medium-high heat. Add chopped sage and cook until crispy, about one minute. Remove from skillet and set aside.
  4. In the same skillet, add sliced mushrooms and minced garlic with another tablespoon of butter. Sauté for about 5 minutes until nicely browned.
  5. Drain cooked tortellini and add it to the skillet with the mushrooms. Stir in remaining butter, parmesan cheese, and crispy sage. Toss gently until coated; season with salt and pepper to taste.
