Ingredients

Scale
  • 10 stalks of celery
  • 6 Medjool dates (pitted and chopped)
  • ½ cup feta cheese (crumbled)
  • ½ cup walnuts or pecans (coarsely chopped)
  • 1 shallot (thinly sliced)
  • Juice from 1 lemon
  • ¼ cup extra-virgin olive oil
  • 1 tablespoon white apple vinegar
  • Red pepper flakes, salt, and pepper to taste

Instructions

  1. Prepare the celery by separating the leaves from the stalks. Slice stalks thinly and chop leaves roughly.
  2. Toast the nuts in a medium skillet over medium heat for about 2–4 minutes until fragrant.
  3. In a mixing bowl, combine celery stalks and leaves with shallots, toasted nuts, dates, feta cheese, lemon juice, vinegar, olive oil, and red pepper flakes. Season with salt and pepper.
  4. Toss gently to combine and serve immediately for optimal freshness.
