  • 2 heads of romaine lettuce (washed and dried, chopped)
  • 3 celery stalks (chopped)
  • 1/2 cup red onion (thinly sliced)
  • 1 cup sharp cheddar cheese (chopped into chunks)
  • 2 gala apples (thinly sliced)
  • Freshly cracked black pepper
  • 1/4 cup extra virgin olive oil
  • 1/2 lemon (juiced)
  • 1 tablespoon dijon mustard
  • 2 tablespoons red apple vinegar
  • 1/2 teaspoon oregano
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, combine chopped romaine lettuce, celery, red onion slices, cheddar cheese chunks, and sliced gala apples. Add freshly cracked black pepper to taste and toss well.
  2. In a mason jar or salad dressing container, mix extra virgin olive oil, lemon juice, dijon mustard, red apple vinegar, oregano, salt, and black pepper. Shake until well combined.
  3. Pour half the dressing over the salad mixture and toss gently to coat evenly. Taste and add more dressing if desired.
  4. Serve immediately or store in an airtight container in the fridge for up to 3–4 days.
