  • 200g all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • 115g unsalted butter, softened
  • 100g brown sugar
  • 2 large eggs
  • 200g finely grated carrots
  • 150g chopped pitted dates

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and line your cake pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger.
  3. In another bowl, cream butter and brown sugar until fluffy. Beat in eggs one at a time.
  4. Gradually incorporate dry ingredients and coconut milk until just combined.
  5. Fold in grated carrots and chopped dates gently.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 35–40 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.
