  • 6 oz cream cheese (room temperature)
  • 3 tbsp white granulated sugar
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup unsalted butter (melted and cooled)
  • 1 cup brown sugar (packed light or dark)
  • 1/2 cup white granulated sugar
  • 1 cup finely grated fresh carrots
  • 2 large egg yolks (room temperature)
  • 2 oz cream cheese (room temperature)
  • 2 tbsp unsalted butter (room temperature)
  • 3/4 cup powdered sugar (sifted)
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, beat together the melted butter, brown sugar, and white granulated sugar until smooth.
  3. Add in the egg yolks one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  6. Gradually add the dry ingredients to the wet mixture until combined.
  7. Fold in the finely grated carrots.
  8. In a separate bowl, beat together the cream cheese and unsalted butter until smooth.
  9. Gradually add powdered sugar while continuing to mix until well blended.
  10. Scoop cookie dough portions onto prepared baking sheets, flatten slightly, place about a teaspoon of cream cheese filling in the center of half of the dough portions, then top with remaining dough portions.
  11. Seal edges carefully around filling.
  12. Bake for 12-15 minutes or until golden around edges but still soft in the center.
  13. Allow cookies to cool on baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
