  • 2 tablespoons butter
  • 3 pears (peeled and diced)
  • 2 tablespoons brown sugar
  • 1 oz apple juice (optional)
  • 2 teaspoons ground cardamom (divided)
  • 5 eggs
  • 2 cups milk
  • 1 cup heavy whipping cream
  • ½ cup sugar
  • ½ teaspoon kosher salt
  • 2 tablespoons raw turbinado sugar (optional)
  • 10 cardamom pods
  • 1 ½ cups sugar (for syrup)
  • ¼ cup water (for syrup)
  • 6 tablespoons butter (for syrup)
  • ¼ cup orange juice (for syrup)
  • zest of 1 orange (for syrup)
  • ½ teaspoon kosher salt (for syrup)
  • pinch ground cardamom (for syrup)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix cubed French bread with melted butter, diced pears, brown sugar, and 1 teaspoon of ground cardamom.
  3. In another bowl, whisk together eggs, milk, heavy whipping cream, sugar, and kosher salt until smooth.
  4. Pour the custard mixture over the bread mixture; let it soak for about 15 minutes.
  5. Transfer to a greased baking dish; sprinkle raw turbinado sugar on top if desired.
  6. Bake for around 60 minutes until golden brown and set in the center.
  7. For the cardamom syrup, combine cardamom pods, sugar, water, butter, orange juice, zest of one orange, kosher salt, and pinch of ground cardamom in a saucepan over medium heat; stir until sugar dissolves and let simmer for about 5 minutes until slightly thickened.
