  • 1/2 cup packed brown sugar
  • 3/4 cup cold butter (cubed)
  • 2 packages cream cheese (8 oz each, softened)
  • 1/2 cup plus 2 tablespoons white sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs (lightly beaten)
  • 3 medium tart apples (peeled and finely chopped)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup quick-cooking oats
  • 1/3 cup caramel ice cream topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 13×9 inch baking pan.
  2. In a bowl, combine flour and brown sugar for the crust. Add cubed butter and mix until crumbly. Press into the bottom of the prepared pan.
  3. In another bowl, beat softened cream cheese with white sugar until smooth. Mix in vanilla extract and eggs until well combined. Fold in chopped apples and spices gently.
  4. Pour the cheesecake mixture over the crust.
  5. In a separate bowl, mix flour, brown sugar, oats, and butter for the topping until crumbly. Sprinkle over the cheesecake filling.
  6. Bake for about 40 minutes or until set. Allow to cool before slicing into squares.
