  • 2 cloves garlic (crushed)
  • 1 tablespoon fresh parsley (chopped)
  • 56 large Portobello mushrooms (stems removed)
  • 56 fresh mozzarella cheese balls (sliced thinly)
  • 1 cup grape tomatoes (sliced thinly)
  • 1/4 cup balsamic vinegar
  • 2 teaspoons brown sugar (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine butter, crushed garlic, and chopped parsley.
  3. Arrange cleaned Portobello mushrooms on a lined baking sheet and brush them generously with the garlic butter mixture.
  4. Layer fresh mozzarella slices inside each mushroom cap, followed by tomato slices.
  5. Bake for about 10 minutes until cheese is melted and bubbly.
  6. For optional balsamic glaze, simmer balsamic vinegar and brown sugar in a saucepan until thickened.
