  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream (or half-and-half)
  • 3 tablespoons flour
  • 10 oz. Rotel diced tomatoes with green chilies
  • 2 teaspoons Cajun seasoning
  • Olive oil and butter for cooking
  • Fresh cilantro and lime juice for garnish

Instructions

  1. Season chicken breasts with Cajun seasoning on both sides. In a skillet over medium-high heat, add olive oil and butter; once melted, cook chicken for about 5–7 minutes per side until fully cooked. Remove from skillet and set aside.
  2. In the same skillet, reduce heat to medium and sauté minced garlic until fragrant. Whisk in flour to create a roux before gradually adding chicken broth and heavy cream until smooth.
  3. Stir in honey, hot sauce, remaining Cajun seasoning, brown sugar, mustard powder, oregano, cayenne pepper, red pepper flakes, and reserved tomato juice. Simmer until the sauce thickens slightly.
  4. Return chicken to the skillet with the sauce; top with diced tomatoes and shredded cheddar jack cheese. Cover and simmer on low heat for about 5 minutes until the cheese is melted.
  5. Drizzle lime juice over the dish before serving and garnish with fresh cilantro.
