Ingredients
- 2 large boneless skinless chicken breasts
- 1 ½ cups chicken broth
- ¾ cup heavy cream (or half-and-half)
- 3 tablespoons flour
- 10 oz. Rotel diced tomatoes with green chilies
- 2 teaspoons Cajun seasoning
- Olive oil and butter for cooking
- Fresh cilantro and lime juice for garnish
Instructions
- Season chicken breasts with Cajun seasoning on both sides. In a skillet over medium-high heat, add olive oil and butter; once melted, cook chicken for about 5–7 minutes per side until fully cooked. Remove from skillet and set aside.
- In the same skillet, reduce heat to medium and sauté minced garlic until fragrant. Whisk in flour to create a roux before gradually adding chicken broth and heavy cream until smooth.
- Stir in honey, hot sauce, remaining Cajun seasoning, brown sugar, mustard powder, oregano, cayenne pepper, red pepper flakes, and reserved tomato juice. Simmer until the sauce thickens slightly.
- Return chicken to the skillet with the sauce; top with diced tomatoes and shredded cheddar jack cheese. Cover and simmer on low heat for about 5 minutes until the cheese is melted.
- Drizzle lime juice over the dish before serving and garnish with fresh cilantro.
