- 1 cup cold unsalted butter
- 2 ⅔ cups + 1 tbsp all-purpose flour
- 3/4 teaspoon fine sea salt
- 1/2 cup water
- 1 tbsp apple cider or white vinegar
- 1 whole egg (whisked)
- 3 cups fresh sliced peaches
- 3 cups fresh strawberries (hulled and quartered)
- ¼ cup granulated sugar
- ¼ cup + 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 2–3 tbsp Turbinado sugar (optional)
Instructions
- Prepare the crust by browning the butter until golden brown, then let cool. Combine flour and salt in a bowl, adding the cooled brown butter, water, vinegar, and whisked egg. Mix until combined and chill for at least an hour.
- In another bowl, toss together sliced peaches, strawberries, sugar, cornstarch, lemon juice, zest, and salt. Let sit for about 15 minutes to develop juices.
- Roll out half the chilled dough on a floured surface to fit your baking dish; transfer carefully into the dish.
- Pour the fruit filling into the prepared crust and roll out remaining dough for the top layer. Create slits for a lattice effect or cover completely; sprinkle with Turbinado sugar if desired.
- Preheat oven to 375°F (190°C) and bake for about 70 minutes or until golden brown and bubbly. Let cool before serving.
