  • 1 tbsp apple cider or white vinegar
  • 1 whole egg (whisked)
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. Prepare brown butter: Melt butter in a saucepan over medium heat until golden brown and nutty. Let cool slightly.
  2. Make the crust: In a bowl, mix flour and salt; add cooled brown butter, water, vinegar, and whisked egg. Combine into a dough, divide into two balls, wrap in plastic, and refrigerate for at least one hour.
  3. Prepare filling: Mix sliced peaches and strawberries with sugar, cornstarch, lemon juice, lemon zest, and salt; set aside.
  4. Roll out dough: Preheat oven to 375°F (190°C). Roll out one dough ball on floured surface to fit pie dish; transfer and trim edges.
  5. Assemble pie: Fill crust with fruit mixture; roll out second dough ball for top or lattice and seal edges.
