  • 2 teaspoons lemon zest
  • 1/4 cup buttermilk
  • 1 1/2 cups blueberries
  • For the filling: 1/2 cup butter (softened)
  • 1/2 cup cream cheese (softened)
  • 3 cups confectioners’ sugar
  • lemon juice

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a stand mixer, beat softened butter and sugar until smooth; add egg, vanilla, and lemon zest.
  4. Gradually mix in the dry ingredients alternately with buttermilk; fold in blueberries.
  5. Scoop batter onto prepared sheets and bake for 10-12 minutes until lightly browned.
  6. Cool on racks before preparing the filling by mixing softened butter, cream cheese, sugar, lemon zest, and confectioners’ sugar.
  7. Assemble by spreading filling between two “cake-cookies.”
