  • 1 ¼ cups flour + 2 TBSP flour (divided)
  • ½ tsp baking soda
  • 1 tsp salt
  • 3 cups quick oats
  • 1 cup white chocolate chips
  • 1 cup blackberries (quartered)

Instructions

  1. Preheat your oven to 325°F and prepare a cookie sheet.
  2. In a large bowl, cream together softened butter with light brown and white sugars until smooth.
  3. Beat in eggs one at a time followed by vanilla extract until well combined.
  4. In another bowl, mix flour, baking soda, and salt; gradually add this to the wet mixture until just combined.
  5. Fold in quick oats and white chocolate chips evenly into the dough.
  6. Coat quartered blackberries in flour before gently folding them into the mixture.
  7. Scoop rounded tablespoons of dough onto the greased cookie sheet.
  8. Bake for 12-13 minutes or until golden brown; cool on the sheet for several minutes before transferring to a wire rack.
