- 2 cups graham cracker crumbs

- 16 ounces cream cheese (room temperature)
- 1/2 cup granulated sugar
- 1/4 cup fresh lemon juice
- 2 large eggs (room temperature)
- 1/4 teaspoon salt
- 1 tablespoon lemon zest (or more)
- 1/2 cup sour cream (room temperature)
- 1/4 cup water
Instructions
- Preheat the oven to 350°F. Allow cream cheese, sour cream, and eggs to reach room temperature.
- Prepare the blackberry puree by boiling blackberries, sugar, and water until thickened; set aside to cool.
- Make the crust by mixing graham cracker crumbs with sugar and melted butter; press into an 8×8 inch baking pan and bake for 9 minutes.
- In a large bowl, beat cream cheese until fluffy. Add sugar, salt, lemon zest, sour cream, eggs one at a time, and lemon juice; mix until smooth.
