  • 2 cups graham cracker crumbs
  • 6 tablespoons melted butter
  • 16 ounces cream cheese (room temperature)
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 2 large eggs (room temperature)
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest (or more)
  • 1/2 cup sour cream (room temperature)
  • 1/4 cup water

Instructions

  1. Preheat the oven to 350°F. Allow cream cheese, sour cream, and eggs to reach room temperature.
  2. Prepare the blackberry puree by boiling blackberries, sugar, and water until thickened; set aside to cool.
  3. Make the crust by mixing graham cracker crumbs with sugar and melted butter; press into an 8×8 inch baking pan and bake for 9 minutes.
  4. In a large bowl, beat cream cheese until fluffy. Add sugar, salt, lemon zest, sour cream, eggs one at a time, and lemon juice; mix until smooth.
  5. Pour the cream cheese mixture over the cooled crust and swirl in the blackberry puree gently.
  6. Bake at 325°F for about 55-60 minutes until edges are set but center jiggles slightly. Cool for at least an hour before refrigerating for three hours before serving.
