- 2 tbsp melted Biscoff cookie butter (for icing)
- 1–2 tsp dairy-free milk (for icing, as needed)
Instructions
- In a mixing bowl, combine warm dairy-free milk and ¼ cup light brown sugar. Sprinkle active dry yeast over the mixture and let it sit for about 5-10 minutes until frothy.
- In another bowl, whisk together all-purpose flour, ground cinnamon, and salt. Set aside.
- Add melted vegan butter and vanilla extract to the yeast mixture. Stir until well combined.
- Gradually add the dry ingredients into the wet mixture. Mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.
- Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm area for about 90 minutes or until doubled in size.
- In a small bowl, mix together brown sugar, ground cinnamon, softened vegan butter, melted Biscoff cookie butter, and crushed cookies.
- Once risen, punch down the dough and roll it out on a floured surface into a rectangle about ½ inch thick.
