  • 1/4 cup fresh lemon juice
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 cup coconut milk
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1/4 cup diced red onion
  • 1 tbsp lime juice
  • Fresh cilantro (chopped)
  • Salt & pepper to taste
  • 1/4 cup mayonnaise
  • 12 tsp sriracha

Instructions

  1. Rinse jasmine or basmati rice until clear. In a medium saucepan, combine rice, coconut milk, water, and salt. Bring to a boil.
  2. Reduce heat to low, cover, and simmer for 15 minutes. Let sit covered for an additional 5 minutes before fluffing.
  3. In a small bowl, whisk together ginger, lemon zest, lemon juice, honey, and soy sauce.
  4. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; cook until golden brown on one side (about 4–5 minutes). Flip and pour the glaze over the chicken; cook until fully cooked through.
  5. Combine diced pineapple, mango, red onion, lime juice, salt, pepper, and optional cilantro in another bowl to make the salsa.
  6. Whisk mayonnaise with sriracha and lime juice for the spicy mayo.
  7. To serve, scoop coconut rice into bowls topped with lemon ginger chicken and salsa.
