- 1 lb ground beef (80/20 or leaner)
- 2 tbsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- 1 can (15 oz) diced tomatoes
- 2 cups beef broth
- 1 can (15 oz) red kidney beans, drained & rinsed
- 1 can (15 oz) black beans, drained & rinsed
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion for 3–4 minutes until soft.
- Add minced garlic and cook for an additional 30 seconds.
- Brown the ground beef in the pot for about 5–7 minutes. Drain excess fat if necessary.
- Stir in chili powder, cumin, smoked paprika, salt, and pepper; cook for 1 minute.
- Mix in tomato paste and cook for another minute before adding diced tomatoes and beef broth.
- Stir in rinsed kidney beans and black beans; simmer uncovered for 30–40 minutes until thickened.
