  • 3 to 4 lb ripe organic tomatoes, cut into wedges
  • 2 bulbs garlic
  • 1/2 onion, diced
  • 1 tbsp extra-virgin olive oil
  • 1 1/2 cups organic heavy cream
  • 2 cups organic vegetable broth
  • 4 tbsp organic tomato paste
  • 1 tsp sea salt, plus more as needed
  • 1 tsp all-purpose seasoning blend
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat oven to 400°F (200°C). On a baking sheet, place tomato wedges and whole garlic bulbs; drizzle with olive oil and roast for about 20 minutes until tender.
  2. In a pot over medium heat, sauté diced onions until translucent (about 5 minutes).
  3. Squeeze roasted garlic into the pot, add roasted tomatoes and vegetable broth. Blend until smooth using an immersion blender or regular blender.
  4. Return to low heat; stir in heavy cream, tomato paste, sea salt, all-purpose seasoning blend, and smoked paprika. Simmer for another 5-10 minutes.
  5. Serve hot, optionally garnished with reserved roasted tomatoes.
