  • 6 large bell peppers
  • 1 pound ground beef or ground turkey
  • 2 tablespoons taco seasoning
  • ¾ cup black beans (rinsed and drained)
  • ¾ cup sweet yellow corn (thawed)
  • 1 jalapeño (sliced, optional)
  • ½ to 1 cup reduced-fat shredded Mexican cheese blend

Instructions

  1. Preheat the oven to 375°F. Line a large baking sheet with parchment paper.
  2. Slice each bell pepper in half lengthwise and cut into six ‘chips.’ Place them on the prepared baking sheet with the insides facing up.
  3. In a skillet over medium heat, cook the ground beef or turkey until browned. Stir in taco seasoning and water, then add black beans and corn. Mix until heated through.
  4. Spoon the filling onto each bell pepper chip and sprinkle cheese on top.
  5. Bake for about 10 minutes until cheese is melted. Serve warm with desired toppings.
