- 6 large bell peppers
- 1 pound ground beef or ground turkey
- 2 tablespoons taco seasoning
- ¾ cup black beans (rinsed and drained)
- ¾ cup sweet yellow corn (thawed)
- 1 jalapeño (sliced, optional)
- ½ to 1 cup reduced-fat shredded Mexican cheese blend
Instructions
- Preheat the oven to 375°F. Line a large baking sheet with parchment paper.
- Slice each bell pepper in half lengthwise and cut into six ‘chips.’ Place them on the prepared baking sheet with the insides facing up.
- In a skillet over medium heat, cook the ground beef or turkey until browned. Stir in taco seasoning and water, then add black beans and corn. Mix until heated through.
- Spoon the filling onto each bell pepper chip and sprinkle cheese on top.
- Bake for about 10 minutes until cheese is melted. Serve warm with desired toppings.
