  • 2 pounds beef chuck
  • 1 teaspoon salt
  • ½ teaspoon freshly cracked black pepper
  • 3 tablespoons neutral oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons garam masala
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • ½ teaspoon ground mustard
  • ½ teaspoon cayenne pepper (optional)
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • 2 tablespoons tomato paste
  • ¼ cup apple cider vinegar
  • 1 cup low-sodium beef stock

Instructions

  1. Cut the beef chuck into 2-inch cubes and season with salt and pepper.
  2. In a skillet over medium-high heat, heat the oil and brown the seasoned beef on all sides. Remove and set aside.
  3. In the same skillet, add onions and cook until caramelized. Add garlic and sauté for about 1 minute.
  4. Stir in all spices followed by tomato paste, apple cider vinegar, and beef stock.
  5. Return the browned beef to the skillet. Cover and simmer on low heat for 60 minutes.
  6. Taste and adjust seasoning if necessary before serving hot over rice or with naan.
