  • 3 ½4 lb beef shoulder
  • ½ lb turkey bacon
  • 1 large onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • kosher salt (as needed)
  • 1 x 500 ml can apple juice
  • 2 tbsp grainy mustard
  • 1 tbsp Dijon mustard
  • 23 sprigs fresh thyme
  • 3 cups chicken broth
  • 1 cup prunes
  • 2 apples
  • 2 tbsp cornstarch

Instructions

  1. Trim excess fat from the beef shoulder and cut it into 2-inch chunks.
  2. In a large braiser or Dutch oven over medium-high heat, heat olive oil and brown the beef in batches until golden on several sides. Season with kosher salt.
  3. Add turkey bacon to the same pot and sauté until crispy. Remove and drain excess oil, leaving about two tablespoons in the pot.
  4. Sauté diced onions until softened, followed by minced garlic for one minute. Deglaze with apple juice.
  5. Stir in mustards, thyme, return the beef to the pot, add chicken broth, and bring to a boil.
  6. Reduce heat to low, cover, and simmer for about an hour. Skim any excess fat.
  7. Incorporate prunes and turkey bacon back into the stew; add quartered apple slices and cook until tender.
  8. Thicken with cornstarch mixed with reserved liquid, cooking until desired consistency is reached.
