- 1 lb baby bok choy, ends trimmed and leaves separated
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons vegetable oil
- 2 tablespoons low-sodium soy sauce
- Optional: 1 tablespoon oyster sauce
Instructions
- Slice the beef thinly against the grain and rinse bok choy leaves.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add beef in a single layer; cook for 2-3 minutes until browned on one side, then flip and cook through. Remove from skillet.
- In the same skillet, sauté garlic and ginger for about 30 seconds until fragrant.
- Add bok choy leaves; stir-fry for 2-3 minutes until wilted.
- Return beef to skillet along with soy sauce (and oyster sauce if using). Toss everything together and cook for another minute. Serve hot.
