  • 1 pound beef sirloin or flank steak, thinly sliced
  • 1 lb baby bok choy, ends trimmed and leaves separated
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons low-sodium soy sauce
  • Optional: 1 tablespoon oyster sauce

Instructions

  1. Slice the beef thinly against the grain and rinse bok choy leaves.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add beef in a single layer; cook for 2-3 minutes until browned on one side, then flip and cook through. Remove from skillet.
  4. In the same skillet, sauté garlic and ginger for about 30 seconds until fragrant.
  5. Add bok choy leaves; stir-fry for 2-3 minutes until wilted.
  6. Return beef to skillet along with soy sauce (and oyster sauce if using). Toss everything together and cook for another minute. Serve hot.
