  • 1/2 tsp vanilla bean paste or pure vanilla extract
  • 1/8 tsp almond extract
  • Several drops pink food coloring (optional)
  • For frosting:
  • 6 egg whites (about 180 g)
  • 1 3/4 cups plus 2 tbsp granulated sugar
  • 2 tbsp light corn syrup
  • Dash of salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sift together cake flour, powdered sugar, and salt multiple times to aerate.
  3. In a mixing bowl, beat room temperature egg whites until frothy; add cream of tartar and continue beating until soft peaks form.
  4. Gradually add superfine sugar while beating until stiff peaks form; mix in vanilla bean paste, almond extract, and food coloring if desired.
  5. Gently fold dry ingredients into whipped egg whites until just combined.
  6. Pour batter into ungreased angel food cake pan and bake for about 35 minutes or until lightly golden.
