  • ⅓ cup dark chocolate chips (optional)
  • ½ cup walnuts (chopped, optional)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon vanilla extract
  • ¼ cup almond milk

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a loaf pan with parchment paper.
  2. In a large bowl, mash the bananas, then mix in sugar, olive oil, almond milk, and vanilla extract until well combined.
  3. Grate the zucchini and squeeze out excess moisture before mixing it into the banana mixture.
  4. In another bowl, combine flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients until just mixed.
  5. Fold in chocolate chips and walnuts if using.
  6. Pour the batter into the prepared loaf pan and bake for 55-65 minutes until golden brown. Test with a toothpick for doneness.
