  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups plain flour

  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 160°C (320°F) for convection or 180°C (355°F) for standard. Grease and line a loaf tin (9 x 5 inches) with baking paper.
  2. In a mixing bowl, mash the overripe bananas and mix in the canola oil, milk, caster sugar, brown sugar, eggs, and vanilla until well combined.
  3. Sift in the flour, baking powder, and salt. Stir gently until just combined; lumps are okay.
  4. Pour the batter into the prepared loaf tin and bake for about 45-55 minutes or until golden brown and a skewer comes out clean. Let cool in the tin for about 10 minutes before transferring to a wire rack.
