  • 4 (8-inch) tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 cups chopped fresh spinach
  • 8 oz mushrooms, sliced
  • Olive oil (for brushing)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Microwave sliced mushrooms in a microwave-safe bowl for 2 to 3 minutes; drain any liquid.
  3. Lightly brush one side of each tortilla with olive oil and place oiled side down on a baking sheet.
  4. On half of each tortilla, layer half of the cheddar and mozzarella cheeses, followed by spinach and mushrooms, then top with remaining cheese before folding.
  5. Bake for 6 minutes, flip carefully, and bake for another 6-7 minutes until golden brown.
  6. Let cool slightly, then slice into wedges and serve warm.
