  • 1/2 cup unsalted butter, softened to room temperature

  • 3 large egg whites, at room temperature
  • 1 and 1/2 teaspoons pure vanilla extract
  • 1/3 cup sour cream or plain yogurt, at room temperature
  • 1/4 cup strong black coffee, cooled to room temperature
  • 1/3 cup plant-based cream alternative
  • 1 cup unsalted butter, softened to room temperature (for frosting)
  • 4 cups confectioners’ sugar (for frosting)
  • 1/2 teaspoon espresso powder (optional, for frosting)
  • 1 and 1/2 Tablespoons strong black coffee, cooled to room temperature (for frosting)

Instructions

  1. Preheat oven to 350°F (177°C) and line muffin pans with cupcake liners.
  2. In one bowl, whisk together cake flour, espresso powder, baking powder, baking soda, and salt.
  3. In another bowl, cream softened butter and sugar until light and fluffy. Add egg whites and mix well.
  4. Gradually incorporate the dry ingredients while adding cooled coffee and plant-based cream until just combined.
  5. Fill cupcake liners two-thirds full and bake for 19-22 minutes or until a toothpick comes out clean.
  6. Cool completely before frosting with whipped buttercream made from softened butter, confectioners’ sugar, coffee, and optional espresso.
