  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sear the beef cubes in olive oil in a large pot over medium-high heat until browned on all sides. Set aside.
  2. In the same pot, sauté diced onion and minced garlic until translucent.
  3. Stir in tomato paste and cook for a minute before deglazing with a splash of beef broth.
  4. Return the beef to the pot, add the remaining broth, carrots, potatoes, parsnips, and celery.
  5. Season with thyme, rosemary, salt, and pepper.
  6. Bring to a boil; then reduce heat to low and simmer for about 2 hours until beef is tender.
  7. Adjust seasoning as needed before serving hot.
