  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 cups vegetable broth
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 cup small pasta (like ditalini or elbow macaroni)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion, carrots, and celery until softened (about 8-10 minutes).
  2. Add minced garlic and herbs; cook for 1 additional minute until fragrant.
  3. Pour in vegetable broth and diced tomatoes; bring to a boil.
  4. Stir in zucchini, yellow squash, green beans, cannellini beans, and kidney beans; reduce heat and simmer for 15 minutes.
  5. Add pasta and cook according to package directions (usually 8-10 minutes) until al dente.
  6. Season with salt and pepper before serving hot.
