Ingredients

  • 3 pounds chuck roast
  • 2 pounds short ribs (bone-in)
  • 8 guajillo chiles
  • 4 ancho chiles
  • 5 cups water
  • 2 cups beef broth
  • 1 large onion (quartered)
  • 1 garlic bulb (cut the tip off)
  • 2 tablespoons avocado oil
  • Fresh cilantro (diced) for topping
  • Fresh lime juice for topping

Instructions

  1. Sear meat: Cut chuck roast into chunks, season with salt and pepper, then brown in a Dutch oven with avocado oil over medium-high heat.
  2. Combine ingredients: Add seared meat back to the pot along with onion, garlic, bay leaves, dried chiles, beef broth, and enough water to cover.
  3. Season: Stir in chicken bouillon, oregano, cumin, and additional salt; bring to a boil.
  4. Skim impurities: After boiling for 30 minutes, skim foam from the surface.
  5. Blend peppers: Remove softened chiles and veggies; blend until smooth (add broth if needed).
  6. Strain mixture: Strain blended mixture back into broth; stir well.
  7. Simmer: Cover and simmer for about 3 hours or until meat is tender enough to shred easily.
  8. Serve: Ladle into bowls; top with cilantro, onions, and lime juice.
