  • 1 tablespoon olive oil

  • 1/4 cup diced bell pepper
  • 3 cloves minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: 1 pound beef, cut into small cubes

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium heat. Sauté onions and bell peppers until softened, then add minced garlic and cook for an additional minute.
  2. Add ground cumin and dried oregano; cook for about 2 minutes.
  3. If using beef, add it now and brown on all sides.
  4. Stir in the rice to coat with oil and seasonings, then add chicken broth and pigeon peas.
  5. Bring to a boil, reduce heat to low, and cover tightly. Simmer for 20-25 minutes until rice is tender and liquid is absorbed.
  6. Remove from heat; let sit covered for an additional 5 minutes before fluffing with a fork.
