  • 1 teaspoon cream of tartar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • ½ cup (113 g) unsalted butter, at room temperature
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup (50 g) granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together flour, baking soda, cream of tartar, ground cinnamon, and salt.
  3. In another bowl, cream together unsalted butter, granulated sugar, and brown sugar until fluffy.
  4. Add the egg and vanilla extract to the butter mixture; blend well.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Gently fold in the chopped apples.
  7. Form tablespoon-sized balls of dough and roll them in a mixture of sugar and cinnamon before placing them on the baking sheet.
  8. Bake for 8–10 minutes or until edges turn golden brown.
