  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 medium apples, peeled, cored, and diced

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon.
  3. In a large bowl, cream softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture while alternating with sour cream. Fold in diced apples gently.
  5. Pour half of the batter into the prepared pan and sprinkle half of the cinnamon sugar mixture (made from 1/4 cup sugar mixed with 1 teaspoon cinnamon) over it.
  6. Pour the remaining batter on top and finish with the remaining cinnamon sugar mixture.
  7. Bake for 50–60 minutes or until a toothpick inserted comes out clean. Let cool for about 10 minutes before transferring to a wire rack.
