  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples (peeled and chopped)
  • 1/3 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a loaf pan by greasing it and lining it with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. Gradually add half the dry ingredients to the mixture, followed by buttermilk; mix until just combined. Fold in remaining dry ingredients carefully.
  5. In another bowl, combine apples with brown sugar and cinnamon.
  6. Pour half of the batter into the prepared pan, sprinkle half of the apple mixture on top, swirl gently. Repeat with remaining batter and apples.
  7. Bake for 55-65 minutes or until a toothpick inserted comes out clean. Let cool before slicing.
