- 1–½ cups fresh apple cider
- 4 tablespoons cold unsalted butter, diced
- 2 large eggs
- 1/3 cup granulated sugar
- ½ cup lightly packed brown sugar
- 1/3 cup light olive oil
- ¼ cup sour cream or Greek yogurt
- 1–½ teaspoons baking powder
- ½ teaspoon baking soda
- 1–½ teaspoons ground cinnamon
- Pinch allspice
- 1/4 teaspoon coarse kosher salt
- 1–¾ cups all-purpose flour
- 1 tablespoon butter, at cool room temperature for topping
- ¼ cup granulated sugar for topping
- 1 teaspoon ground cinnamon for topping
Instructions
- Preheat your oven to 350°F and prepare a 9” square baking dish with butter or oil and parchment paper.
- Boil the apple cider in a large sauté pan until reduced by half (about 5 minutes). Whisk in the diced butter until melted.
- In a medium bowl, mix eggs, sugars, oil, sour cream, baking powder, baking soda, spices, and salt. Gradually whisk in the reduced cider mixture.
- Gently fold in the flour until just combined.
- Pour batter into the prepared dish and bake for 22–25 minutes until golden brown and cooked through.
- Cool slightly before topping with melted butter and a cinnamon-sugar mix.
