  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream or Greek yogurt
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature for topping
  • ¼ cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions

  1. Preheat your oven to 350°F and prepare a 9” square baking dish with butter or oil and parchment paper.
  2. Boil the apple cider in a large sauté pan until reduced by half (about 5 minutes). Whisk in the diced butter until melted.
  3. In a medium bowl, mix eggs, sugars, oil, sour cream, baking powder, baking soda, spices, and salt. Gradually whisk in the reduced cider mixture.
  4. Gently fold in the flour until just combined.
  5. Pour batter into the prepared dish and bake for 22–25 minutes until golden brown and cooked through.
  6. Cool slightly before topping with melted butter and a cinnamon-sugar mix.
