  • 1¼ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons apple cider (not reduced)
  • ¾ cup granulated sugar
  • 2 teaspoons ground cinnamon or spice blend
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract
  • 12 tablespoons apple cider (not reduced)

Instructions

  1. Reduce the apple cider in a saucepan over medium-high heat until it becomes about ¼ cup. Allow it to cool.
  2. Brown unsalted butter over low heat until nutty and golden, then cool.
  3. In a bowl, whisk flour, baking powder, baking soda, cornstarch, spices, and salt together.
  4. Combine cooled brown butter with sugars in a mixing bowl; whisk in egg, yolk, reduced apple cider, and vanilla until smooth.
  5. Mix dry ingredients into wet until just combined; let rest while preheating oven to 375°F (190°C) and lining a baking sheet with parchment.
  6. Scoop dough onto the sheet and bake for 9–11 minutes until edges are set.
  7. Cool briefly before coating with cinnamon sugar mixture and glazing.
