- 1 cup apple cider

- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons butter (or plant-based alternative)
- ¼ cup heavy cream or milk (or dairy-free alternative)

Instructions
- Marinate beef medallions in a bowl with ½ cup apple cider, garlic, thyme, salt, and pepper for at least 15 minutes.
- Boil salted water in a large pot. Add sweet potatoes and cook until tender (15-20 minutes). Drain and return to pot.
- Heat olive oil in a skillet over medium-high heat. Sear marinated beef for about 3-4 minutes on each side until browned. Remove from skillet.
